Trying to get healthy, but not sacrifice flavor, and not make you feel hungry and unsatisfied! Well this is an amazing taco meat, rice, and my version of Pico! Not to mention it hits all the points on health for the entire family to enjoy…and if you have picky eaters….I can’t express how amazing this meat is! You know by now we love spice, so make sure you do the adjustments I mention to your desire.This is simple and cooks fast, and most of all full of flavor and super healthy!
And might I ad, this was done in the tiny kitchen in our hotel.
-Roma Tomatoes. I always buy a pound and then use on this recipe a good 1/2 pd.
– Jalapeno sliced and diced! ( if you don’t want so much heat this is where you remove the seeds)
– 1/2 Large Red onion diced
– 2 Limes
– 1/2 Cup of Cilantro
– Salt and Pepper
Start Cooking~ Cut tomatoes in half and spoon out the insides. Now dice to your desired texture, I change it up. Every time I make it. Get creative! Now combine tomatoes, onions, jalapeno, and cilantro. Squeeze the juice of the two limes and add salt and pepper. Do the salt and pepper to your tastes. You really only need a small pinch of salt, and yes..of course I think a good pinch of pepper. The longer this sits the more the flavors combine. But we eat this right away sometimes! Making big batches is always awesome, we put this shit on everything…lol!
Ground Turkey Taco Meat!
– Olive Oil
– 1 Pd. Ground Turkey Meat
– 2 Cans of Diced Green Chilies
– 1 Pkg. of Old El Paso with Low Sodium
– 1 clove of Minced Garlic
– 1/4 Cup of Chopped Cilantro
– 1/2 Cup of Low Sodium Chicken Stock
– Good Pinch of Crushed Red Pepper
– Honey, about 1 tsp.
– 2 Limes
Drizzle the bottom of a large skillet with olive oil, keep in mind you want to by the leanest ground turkey. Add the flavor and keep out the fat! Add ground turkey to the skillet and allow to halfway brown. Add a pinch of salt and pepper. Again remember to use less salt, we will add so much more flavor, that you just don’t need it. Once it’s halfway through cooking add the 2 cans of green chili’s. Mix all together and make sure the meat is broken up to your desire. Now is the time to add your garlic. This allows the garlic to cook, but not burn! Sprinkle the taco seasoning packet and crushed red pepper, mix well. You want this to simmer for 3-5 minutes. Don’t miss this step, this totally takes the flavor to a whole new level. Glaze the bottom of the pan with the chicken stock, get all those bits they totally intensify the flavor too! Squeeze the limes and all this to simmer for 15-20 minutes. Place it on low, and this allows you to get things done in the kitchen or something else that needs tending to!
Place onto whatever you want!
– Whole Grain Rice~ 2 cups of rice and 2 cups of water, or you can use low sodium chicken stock!
– 1/2 Cup of Chopped Cilantro
– Crushed Red Pepper ( Just to your desire.) I use about 1/2 tsp.
– 1 Can of Diced Green Chili’s
– Salt and Pepper
Start Cooking~ Combine rice and water, season with a pinch of salt. Cook as directed on your brand of rice, just make sure it’s whole grain.
The last 5 minutes add the rest of the ingredients! Let simmer for 5-10 minutes. If you notice the rice is too dry, just a little bit of chicken stock.
Now is the time to do your creative thinking, but think healthy. There are a milllion and one meals you can add and create so have fun!

-Store bought cooked shrimp
– Jalapeno (optional)
– Asian Salad Dressing of your choice
– Soy Nuts
This is such a complicated recipe…Totally Joking!!!
Chop all veggies to your desire…we like chunky!
Pull lettuce leaves apart carefully and place ingredients in wrap!
Drizzle lemon and lime juice
Drizzle with Dressing!
Eat…and we also served this with some sushi! Store bought! And of course some hot sauce!
Manors! Ugh…Why in the world do parents not focus on this? Most do, but the ones that don’t drive me insane. All it does is make it harder on you as a parent, and it’s embarrassing? Right?
Raise your babies to love and respect the world, no child is perfect, and it takes a lot of patience and persistence. It’s so worth it! We have 4 kids ranging from 15 all the way down to 4:) and they are so well behaved.(not perfect) but let me tell you it’s hard! I just don’t see any option to let them act like brats…it’s not what you do! So I thank all you parents out there that are raising our next generation:)
